Land-based renewables (windfarms) are being developed across Scotland to help meet the
Scottish Government’s target of 80% energy generation from renewables by 2020. The majority of constructed and planned windfarms are on less productive land, often peatlands. Windfarm
development has progressed faster than the capacity to make evidence-based decisions on
peatland management with respect to hydrology and carbon balance. Our previous work (Waldron

Project description: Oral coatings, tastant migration and taste perception The release of tastants such as sugar and salt from a food product and the migration of the tastants to the taste buds is largely determined by the properties of the food product, the breakdown behaviour in the oral cavity and the formation of oral coatings. In order to modulate taste perception a tastant molecule must reach the taste buds. Knowledge about the velocity and concentration at which tastants reach the taste buds under different oral coating conditions is currently lacking.

Project description: Fat functionality in foods The objective of the PhD project is to understand the functionality of fat and fat replacers in foods and beverages. The influence of fat droplet properties on the sensory perception of liquid emulsions is investigated. The effect of the interactions between oil droplets and thickening agents on the formation of oral coatings and the subsequent influence on sensory perception is studied. Emulsion filled gels and double emulsions are used as model systems.

PostDoc “Compound specific hydrogen isotopes a new tool for reconstructing paleo sea surface salinities”

In this project we want to investigate the hydrogen isotope composition of specific algal and bacterial lipids as proxy for reconstructing paleosalinity. Recent results showed that the hydrogen isotopic composition of algal long-chain alkenones may be a promising tool for paleo sea surface salinity reconstructions. The main aim of this project is to further develop the paleosalinity proxy and extending it to other algal, bacterial and, potentially, more general phototroph lipids and applying it to different paleo settings.
